Mixed vegetable sagu or saagu recipe explained with step by step pictures and video. This Karnataka style vegetable sagu or veg saagu is served as an accompaniment with set dosa or poori. Vegetable sagu or saagu is a kind of vegetable kurma having very soft and mild taste. This sagu taste resembles the Karnataka style pulav recipe. Because almost same set of spices and ingredients are used in both the recipes. So...now you can imagine, how tasty this sagu will be.

This sagu is prepared using mixed vegetables and few spices. The amount of spices used will be very less compared to the amount of vegetables. Also this sagu will not be very spicy also. In Karnataka set dosa and vegetable sagu or poori and vegetable sagu are two very popular combos. You can find vegetable kurma recipe also on this website, which is slightly different than this.

And coming to the recipe, there are so many variations, which are in practice. But as I said earlier whatever recipe you use the amount of spices should be less. I got this recipe from my mother or I would say from my brother. This is how I prepare at home and it tastes just like the one, which they serve in the hotel. And if you are looking for red or whitish colour sagu, then just change the ingredients. Like add red chili instead of green chili to get red color sagu. Skip or reduce coriander leaves to get whitish colored sagu. Skip tomato and add lemon juice at the end to get more whitish colored sagu etc.

Vegetable sagu recipe

Preparation time: 20 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 big carrot
  2. 1 medium sized potato
  3. 8-10 beans
  4. 1 knol khol / 2 cabbage leaves / few cauliflower florets
  5. 1/4 cup soaked or fresh green peas
  6. 1 big onion
  7. 1 tomato
  8. 1/4 tsp turmeric powder (optional)
  9. 4 tsp cooking oil / Ghee
  10. 1/4 tsp mustard seeds
  11. 1/2 tsp urad dal
  12. 4 - 5 curry leaves
  13. Salt as per your taste

Ingredients for grinding:

  1. 1/2 cup grated coconut
  2. 1cm length ginger
  3. 3 cloves garlic
  4. 1 tsp coriander seeds
  5. 1/2 tsp cumin seeds
  6. 2 tbsp roasted gram / hurigadale / putani
  7. 1 tsp poppy seeds / gasagase
  8. 1 - 2 green chili
  9. 1/2 finger length cinnamon
  10. 4-5 cloves
  11. 1 cardamom
  12. 2 tbsp coriander leaves (optional)

Instructions for making vegetable sagu or veg saagu:

  1. Chop all the vegetables. Transfer chopped carrot, beans, potato, knol khol or cabbage, grean peas into a pressure cooker. Add in salt and a pinch of turmeric and cook well by making 2 whistles. Please note you should not add onion and tomato.vegetables for karnatka style veg sagu or saagu
  2. Take all the ingredients listed under "for grinding" as per the measurement.spices for karnatka style veg sagu or saagu
  3. Transfer all the above ingredients along with coconut into a mixe jar or blender. And make a fine paste using required water. Set it aside.grinding spices for karnatka style veg sagu or saagu
  4. Take 4 tsp of oil in a wok or frying pan and heat it. Now prepare tempering using mustard seeds, urad dal and curry leaves.tempering for karnatka style veg sagu or saagu
  5. Add in chopped onions and fry until soft. onion for karnatka style veg sagu or saagu
  6. Add in chopped tomatoes and fry until tomatoes are soft. tomato for karnatka style veg sagu or saagu
  7. Next add in cooked vegetables cooked vegetables for karnatka style veg sagu or saagu
  8. Add in ground spices or masala. onion for karnatka style veg sagu or saagu
  9. Add in required water, salt and mix well. Please note you have already added some salt while cooking the vegetables. Also the sagu should be having thick gravy consistency. water and salt for karnatka style veg sagu or saagu
  10. Bring it to boil. Serve it with hot set dosa or poori or chapathi or any other dosas. boiling karnatka style veg sagu or saagu
