Avarekalu mixture recipe

Preparation time: 5 hr
Cooking time: 10 min
Serves: 1.5 cup

Ingredients: (measuring cup used = 240ml)

  1. 1 cup avarekalu or hyacinth beans
  2. 0.5 cup thick beaten rice or poha or avalakki
  3. 2 tbsp ground nuts or peanuts or shenga
  4. 2 tbsp fried gram or hurigadale
  5. Oil for deep frying
  6. 1/2 tsp red chili powder (adjust as per your spice level)
  7. 2 big pinch of hing or asafoetida
  8. 2 big pinch of turmeric powder
  9. 7 - 8 curry leaves
  10. Salt as per your taste

Instructions for making avarekalu mixture:

  1. I have used this type of beans, which is popular by name avarekai in Kannada language. Only the inside beans are used in the cooking.avarekalu or avarekai image
  2. Peal the avarekai or hyacinth beans and collect 2 cups of beans. Soak them in the water for 4 - 5 hours or overnight.avarekalu or beans for avarekalu mixture
  3. After soaking remove the outer skin of the beans or avarekalu to get "hitikida or hisukida" avarekalu. Spread them on a cotton cloth to remove the excess water content.hisukida avarekalu or beans for avarekalu mixture
  4. Now take oil in a deep frying pan and heat it. Fry the deskinned avarekalu until crisp.deep frying avarekalu or beans for avarekalu mixture
  5. Fry thick poha or gatti avalakki until crisp. Switch off the stove.deep frying thick beaten rice for avarekalu mixture
  6. Now take a tsp of oil in another pan and heat it. Add in ground nuts or peanuts and fry until crisp.groundnuts for avarekalu mixture
  7. Next add in curry leaves and fry until crisp. You can also fry and add thinly sliced dry coconut.curry leaves for avarekalu mixture
  8. Switch off the stove and add in all the spice powders like chili powder, asafoetida and turmeric powder. Also add in salt, fried gram (hurigadale), deep fried avarekalu and thick poha (gatti avalakki). Give a quick stir and is done.
