Nargis mandakki or davangere churumuri recipe explained with step by step pictures. Nargis mandakki is a very popular mandakki or bhel recipe from the town davangere located in central part of Karnataka. This is a very tasty and simple mandakki or churumuri or bhel recipe. This recipe makes use of sambar powder. If you do not have sambar powder then replace it with rasam powder.

In Karnataka, the mandakki or churumuri recipe varies from region to region. I have already posted Mangalore style churumuri and Hubli special girmit (dry version) on this website. Davanagere is popular for some dishes like mirchi bajji, churumuri, khara mandakki, benne dosa, khali dosa, Guladiki Undi and many more.

Actually I am posting this recipe upon repeated request from one of the valuable reader. And this recipe is from my dear friend Pankaja. Pankaja's brother lives in Davangere and she has many friends from there. So she got this recipe for me from her friends. This is a very very tasty churumuri or bhel recipe. So I would like to thank my friend and her friends for this yummy recipe.

I have also heard that there are 2 - 3 different ways of preparing nargis mandakki. So recently I got another version of nargis mandakki from Madhu (she has a blog Madhu's kitchen). So I have updated that recipe as well.

Nargis mandakki recipe

Preparation time: 10 min
Cooking time: 5 min
Serves: 2

Ingredients (type 1): (measuring cup used = 240ml)

  1. 2 cup puffed rice or mandakki or churumuri or murmura (crispy ones)
  2. 1/4 tsp mustard seeds
  3. 1/4 tsp jeera or cumin seeds
  4. 4 - 5 curry leaves
  5. 1 - 2 finely chopped green chili
  6. 1 small onion finely chopped
  7. 1 small tomato finely chopped
  8. One big pinch turmeric powder
  9. 1/4 - 1/2 tsp sambar powder
  10. 1/4 tsp sugar
  11. 1/2 tsp lemon juice (optional)
  12. 2 tbsp finely chopped coriander leaves
  13. 2 tbsp finely grated coconut
  14. 2 tbsp sev mixture (optional)
  15. 2 tsp cooking oil
  16. Salt as per your taste

Ingredients (type 2): (measuring cup used = 240ml)

  1. 2 cup puffed rice or mandakki or churumuri or murmura (crispy ones)
  2. 2 green chilies
  3. 1 small onion finely chopped
  4. 1/4 cup roasted gram or putani
  5. 1/4 cup roasted peanuts or shenga
  6. 1 tsp roasted white sesame seeds or ellu
  7. 2 tbsp finely chopped coriander leaves
  8. 2 tbsp sev mixture
  9. 2 tbsp cooking oil
  10. Big pinch of turmeric powder
  11. Salt as per your taste

Instructions for making nargis mandakki (type 1):

  1. Heat 2 tsp of oil in a frying pan. Prepare tempering using mustard seeds, cumin seeds and curry leaves. Switch off the stove.tempering for nargis mandakki
  2. Next add in finely chopped green chili, tomato and onion. Give a quick mix.toamto, onion and green chili for nargis mandakki
  3. Add in salt, sugar, sambar powder, lemon juice and a pinch of turmeric powder. You can adjust salt and sugar level as per your taste. Please note adding lemon juice is optional. If you do not have sambar powder replace it with rasam powder. Give a quick mix.salt, sugar, turmeric powder and sugar for nargis mandakki
  4. Add in puffed rice or mandakki. I have added crispy unsalted variety.crispy puffed rice for nargis mandakki
  5. Give a quick mix. Now you need to serve this immediately.spicy puffed rice mixture for nargis mandakki
  6. So transfer the spicy mandakki mixture into the plates. Garnish it with chopped coriander leaves, grated coconut and sev mixture. Please note sev mixture is optional. Serve immediately.Garnishing nargis mandakki

Instructions for making nargis mandakki (type 2):

  1. To begin with make a fine powder of roasted gram, roasted white sesame seeds and roasted peanuts.
  2. Shallow fry the green chilies and keep it ready.
  3. Next in a big container take mandakki or churumuri. Take crispy mandakki.
  4. Add in 2 tbsp of oil, big pinch of turmeric powder and salt. Give a quick mix.
  5. Next add in 2 tbsp of powder from step 1. Give a quick mix.
  6. Immediately transfer it into the plates. Garnish it with chopped coriander leaves, chopped onion, sev mixture and fried green chili. Serve it immediately.
