Uddina vade or medu vada recipe explained with step by step pictures. Medu vada is familiar by name uddina vade or tootu vade in Karnataka. "Uddu" translates to "urad dal" and "tootu" translates to "hole" in Kannada language. Uddina vade or medu vada is very tasty and very popular breakfast or snacks recipe in Karnataka.

Preparing uddina vade or medu vada using mixer grinder is not at all difficult if you follow this recipe. A trick is used here to prepare super crispy, soft and tasty uddina vade or medu vada. In this recipe uddina vade is prepared using soaked urad dal and home made roasted rice flour. You guessed it right..that is the trick. Preparing home made roasted rice flour is very easy. That makes your job easy, hassle free and gives all required taste and crispiness. Again this is an age-old recipe from my grandmother like crispy chakli and thambittu recipes.

Uddina vade or medu vada recipe

Preparation time: 5 hours
Cooking time: 30 min
Serves: 12

Ingredients: (measuring cup used = 240ml)

  1. 1 cup urad dal
  2. 1/2 cup rice
  3. 1/3 cup water
  4. 5 - 6 curry leaves finely chopped
  5. 1 - 2 green chili finely chopped
  6. 1 tsp finely chopped ginger
  7. 1 tbsp finely chopped coconut (optional)
  8. Salt as per your taste

Instructions for making uddina vade or medu vada:

  1. Rinse and soak urad dal for 4 hours.soaked dal for uddina vade or medu vada
  2. Rinse, drain the water completely and spread the rice in a wide bowl.rice for uddina vade or medu vada
  3. Once the rice is dry, transfer it to a pan and dry roast until white.dry roasting the rice for uddina vade or medu vada
  4. Wait until cool and dry grind it using mixer grinder. Sieve it and keep it aside. This rice flour will not be very fine.home made rice flour for uddina vade or medu vada
  5. After 4 hours, drain the water from the soaked urad dal and transfer it to a mixie jar.soaked urad dal for uddina vade or medu vada
  6. Grind until smooth and fluffy using very less water required. Use cold or ice water for better result especially if you are living in a warm climate. You can use upto 1/3 cup of water.grind urad dal for uddina vade or medu vada
  7. Pour the urad dal batter into a container and add in half portion of home made roasted rice flour from step 4. Give a quick mix. You can also refrigerate the batter (not in the freezer) for 15 minutes. Which makes the batter thick and will be easy to handle.urad dal batter and rice flour for uddina vade or medu vada
  8. Next add in chopped ginger, green chili, curry leaves, coconut and salt.spices and salt for uddina vade or medu vada
  9. Next add in required roasted rice flour to make the batter thick. The batter should be thick enough to handle using wet fingers. If you use more rice flour, vada will be little hard and less oily. And if you use less rice flour, vada tastes good but will be little oily. I used entire roasted rice flour.thick urad dal batter for uddina vade or medu vada
  10. Heat oil in a deep frying pan. Wet your fingers. Take a big lemon sized batter, make it flat, make a hole in the center using thumb. If you find this step difficult just prepare it like goli baje or mangalore bajji. It comes out fine with different shape.making uddina vade or medu vada
  11. And carefully drop the batter into the hot oil. Fry until golden brown or until the bubbles are stopped. I missed the image at this stage. Will update it when I prepare medu vada next time.
