Aloo gobi or alugadde hookosu gojju recipe explained with step by step pictures. Aloo gobi curry or alugadde hookosu gojju goes well with chapathi or roti. This is a very simple curry recipe prepared using potato, cauliflower, fresh green peas, tomato, onion, ginger, garlic and spices. You can serve this aloo gobi or alugadde hookosu gojju with jowar roti (jolada rotti) or chapathi.

I am posting this recipe upon request from our valuable readers. Actually when they requested the recipe, I realised that I have not posted any cauliflower recipes. Actually in Karnataka hookosu or cauliflower is used in vegetable pulav and mixed veg sagu. So I thought I will post one simple and tasty curry recipe. Apart from this you can use gobi or cauliflower in gobi manchurian and bajji recipes. I have referred this blog for the recipe but I have done some changes as per my taste.

Aloo gobi or Alugadde hookosu gojju recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup cauliflower florets or gobi or hookosu
  2. 1/2 cup chopped potato
  3. 1/2 cup fresh green peas (can be replaced with potato)
  4. 1/2 tsp jeera or cumin seeds
  5. 1 tsp red chili powder
  6. 1/4 tsp garam masala
  7. 1 tsp coriander or dhaniya powder
  8. 1/4 tsp turmeric powder
  9. 1 tbsp finely chopped coriander leaves
  10. 1 tbsp kasuri methi or dried methi leaves (optional)
  11. 2 tbsp cooking oil
  12. Salt as per your taste

Ingredients for grinding:

  1. 3 - 4 cloves garlic
  2. 1cm length ginger
  3. 1 onion chopped
  4. 1 big tomato chopped

Instructions for making Aloo gobi or Alugadde hookosu gojju:

  1. Rinse and blanch cauliflower florets for 2 minutes in boiling water along with little salt.blanching cauliflower for aloo gobi or alugadde hookosu gojju
  2. Grind ginger, garlic, onion and tomato into a fine paste using mixer grinder.grinding onion and tomato for aloo gobi or alugadde hookosu gojju
  3. Now in a deep frying pan heat 2 tbsp oil and add in 1/2 tsp cumin seeds.cumin seeds for aloo gobi or alugadde hookosu gojju
  4. When the cumin seed splutters add in ground onion+tomato+giner+garic paste. Fry for 2 minutes.ground paste for aloo gobi or alugadde hookosu gojju
  5. Add in dry spice powders like red chili powder, coriander powder, turmeric powder and garam masala powder. Give a quick mix.spice powders for aloo gobi or alugadde hookosu gojju
  6. Next add in blanched cauliflower florets, chopped potato and fresh green peas. Give a quick mix.cauliflower, potato and green peas for aloo gobi or alugadde hookosu gojju
  7. Add a cup of water, salt and bring it to boil.water and salt for aloo gobi or alugadde hookosu gojju
  8. Close the lid and allow it to cook under low flame.cooking aloo gobi or alugadde hookosu gojju
  9. After around 10 minutes or when the vegetables are cooked and soft, add in kasoori methi and cook for 2 more minutes.kasuri methi for aloo gobi or alugadde hookosu gojju
  10. At the end sprinkle coriander leaves and switch off the stove. Serve it with roti or chapathi.coriander leaves for aloo gobi or alugadde hookosu gojju
