Ananas payasa or pineapple payasa explained with step by step pictures. Ananas payasa or pineapple payasa is a sweet delicacy prepared using pineapple, jaggery and coconut milk. You can use store bought coocnut milk or home made coconut milk. I prefer homemade coocnut milk. In Karnataka "payasam" or "kheer" is called by name just "payasa". And in Kannada language pineapple is called by name ananas. So this payasam is familiar by name "ananas payasa" in Karnataka.

I learnt this ananas or pineapple payasa recipe from my mom-in-law. She just loves preparing and serving varieties of payasas. She prepares many tasty payasas like bottlegourd payasa, jackfruit payasa, carrot payasa, dates payasa, mungdal payasa, rava payasa, bengal gram dal payasa, poppy seeds payasa, sabudana payasa, sweet potato payasa, vermicelli payasa, halu payasa or rice kheer, cucumber payasa and many more. Like this the payasa list goes on.

Ananas payasa or pineapple payasam recipe

Preparation time: 10 min
Cooking time: 30 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1 medium sized pineapple / 1 cup finely chopped pineapple
  2. 1 cup jaggery (as per your taste)
  3. 2 cups coconut milk.
  4. 3 tsp rice flour
  5. 2 tsp ghee
  6. 8-10 cashews
  7. 8-10 raisins
  8. 1 cup water
  9. A pinch of cardamom powder
  10. A pinch of salt

Instructions for making ananas pineapple payasa:

  1. Take a medium sized well ripened Pineapple (ananas) and wash it thoroughly.well ripened pineapple for pineaple or ananas payasa
  2. Peel the Pineapple (ananas) and remove the eyes.peeling pineapple for pineapple or ananas payasa
  3. Now cut Pineapple (ananas) into vertical pieces and remove the middle hard part. Refer the picture below.cutting pineapple for pineapple or ananas payasa
  4. Chop the vertical pieces of Pineapple (ananas) into small tiny pieces.chopping pineapple for pineapple or ananas payasa
  5. Take 1 cup of coarsely powdered jaggery and 1 cup of water in a vessel and keep it for boiling. jaggery for pineapple or ananas payasa
  6. When it starts boiling switch off the stove and keep it aside. We will be using this jaggery syrup later. jaggery syrup for pineapple or ananas payasa
  7. Take 2 tsp of ghee is a thick bottomed pan, fry the cashews and set it aside. frying cashews for pineapple or ananas payasa
  8. Now in the same pan fry the raisins and keep it aside. frying raisins for pineapple or ananas payasa
  9. Now add in finely chopped pineapple to the same pan and start frying.frying pineapple for pineapple or ananas payasa
  10. Fry the pineapple pieces for 5 minutes under medium flame. The pineapple pieces will turn soft and you can observe a slight colour change.frying pineapple for pineapple or ananas payasa
  11. Now its time to add jaggery syrup to the fried pineapple. Add in jaggery syrup using a strainer. This helps in removing the impurities of jaggery.jaggery syrup for pineapple or ananas payasa
  12. Bring the pineapple and jaggery syrup to boil and reduce the flame. Continue boiling till the pineapple is cooked.boiling pineapple and jaggery syrup for pineapple or ananas payasa
  13. Allow it to boil for 10 to 15 minutes in the jaggery syrup. You can observe the pineapple pieces will turn more soft.cooking pineapple in jaggery syrup for pineapple or ananas payasa
  14. Now its time to add coconut milk (unsweetened). You can use either store bought coconut milk or home made coconut milk. Add 2 cups of coconut milk (Prepared using 2 cups grated coconut and 2 cups water).coconut milk for pineapple or ananas payasa
  15. Take 3 tsp of rice flour in a bowl, add in little water and make a thin paste out of it.rice flour for pineapple or ananas payasa
  16. Add in this rice flour paste to the payasa. Adding rice flour paste gives good texture and taste. Remember after this stage you have to start stirring the payasa more frequently.rice flour paste for pineapple or ananas payasa
  17. Add in a big pinch of salt. Adding salt removes the bland taste of the payasa.adding salt for pineapple or ananas payasa
  18. Add in fried cashews, raisins and a big pinch of cardamom powder. I missed the picture of adding cashews and raisins. By now payasa will be boiling well and switch off the stove. Remember don't boil the payasa for long time after adding coconut milk. Serve tasty pineapple payasa either hot or cold.cashews, raisins and cardamom for pineapple or ananas payasa
