Southekayi idli or cucumber idli recipe explained here with step by step pictures and a video. Southekayi idli is an instant idli since fermentation is not required. Where as the regular idli (soft idli using idli rava) requires 7 - 8 hours of fermentation. Southekayi idli prepared using grated cucumber and idli rava (rice rava). Southekayi or cucumber idli can be served as an evening snack or as a breakfast item. Grated cucumber, coconut, green chilli, coriander leaves and idli rava are mixed well and steamed like any other idlies. Whenever I prepare southekayi or cucumber idli for breakfast, I also prepare pumpkin sweet idli. And this sweet and spicy combination is a super hit in my home. You can even prepare sweet version of these cucumber idlis by following pumpkin sweet idli recipe.

This southekayi or cucumber idli is an age-old recipe and is familiar by name "southekayi kadubu". Home made rice rava is used in the authentic southekayi kadubu recipe. Also the authentic southekayi kadubu is prepared either as rice dumplings(balls) or is covered and cooked using banana leaf.

I used store bought rice rava and if you would like to prepare rice rava at home you can do so. To prepare rice rava at home, rinse the rice, drain the water and keep it overnight for drying (no need to sun dry). Next day morning using mixer grinder dry grind it for few seconds to get coarse rava.

Southekayi or cucumber idli recipe

Preparation time: 10 min
Cooking time: 15 min
Serves: 2

Ingredients: (measuring cup used = 120ml)

  1. 2 cups grated southekayi or cucumber
  2. 1 - 1.5 cup idli rava or rice rava (depends on the juiciness of cucumber)
  3. 0.5 - 1 cup fresh grated coconut
  4. 1 - 2 green chilies
  5. 2 tbsp chopped coriander leaves
  6. Salt as per your taste.

Instructions for making southekayi or cucumber idli:

  1. Wash and grate the cucumber. Transfer the grated cucumber in to a large bowl.grated cucumber for southekayi idli
  2. Add in idli rava or rice rava.rice rava for southekayi or cucumber idli
  3. Dry grind grated coconut and green chilli in a mixer grinder. Grind without adding any water.grinding coconut and chilli for southekayi or cucumber idli
  4. Add in ground coconut and green chilli to the bowl, which has grated cucumber and rava.add coconut for southekayi or cucumber idli
  5. Add in finely chopped coriander leaves.coriander leaves for southekayi or cucumber idli
  6. Add in salt as per your taste.salt for southekayi or cucumber idli
  7. Now mix it well and rest it for 10 minutes. The batter should be having dropping consistency but you should be able to manage the batter with hands. You can also grind it for few seconds using mixer grinder for better binding.mixing batter for southekayi or cucumber idli
  8. Take the idli plates, grease it and drop the batter. Press it gently to give the idli shape.putting batter to idli plates for southekayi idli
  9. Steam it for 12 - 15 minutes. Serve it hot with coconut chutney.mixing batter for southekayi or cucumber idli
