Instant masala vada or ambode recipe explained with step by step pictures and a video. This masale vade or chattambade is prepared using hurigadale or fried gram. Masala vada or ambode can be prepared in very less time as there is no soaking involved. This ambode tastes good and crispy.

The ingredients used in this recipe are fried gram, green chili, ginger, curry leaves, coriander leaves, onion, dill leaves, coriander seeds and one red chilli. Onion is an optional ingredient which you can skip or can be replaced with finely chopped cabbage pieces.

Masala vada or ambode recipe

Preparation time: 10 min
Cooking time: 10 min
Serves: 15

Ingredients for masala vada (Type1): (measuring cup used = 240ml)

  1. 1 cup fried gram or hurigadale
  2. 1 - 2 green chillies
  3. 5 - 6 curry leaves finely chopped
  4. 1 tsp finely chopped ginger
  5. 1 tbsp finely chopped coriander leaves
  6. 1 onion chopped
  7. 2 - 4 tbsp finely chopped dill leaves or sabsige soppu
  8. 1/2 tsp coriander seeds
  9. 1 red chilli
  10. Salt as per your taste

Instructions for making masala vada or ambode:

  1. Take chopped green chilli, ginger and curry leaves in a container.green chilli, ginger and curry leaves for hurigadale ambode or fried gram masala vada
  2. Add in chopped coriander leaves.coriander leaves for hurigadale ambode or fried gram masala vada
  3. Also add chopped onion.onion for hurigadale ambode or fried gram masala vada
  4. Followed by add in chopped dill leaves.dill leaves for hurigadale ambode or fried gram masala vada
  5. Add salt as per taste and give a quick mix.salt or cabbage for hurigadale ambode or fried gram masala vada
  6. Next in a mixie jar take fried gram, coriander seeds and red chilli. Make a semi-fine powder.fried gram for hurigadale ambode or fried gram masala vada
  7. Add this to the container that has other chopped ingredients.ground fried gram for hurigadale ambode or fried gram masala vada
  8. Add in required water and make a stiff dough.onion or cabbage for hurigadale ambode or fried gram masala vada
  9. Next take a lemon sized "dal and spice mixture" and prepare flat vadas using your palms. Press gently between the palms to get the flat shape. Actually it should be little thick in the middle and thin towards the border. It happens naturally when you press between the palms.making hurigadale ambode or fried gram masala vada
  10. Heat oil in a deep frying pan and deep fry the vadas under medium flame.deep frying hurigadale ambode or fried gram masala vada
  11. Fry them until light brown and bubbles are stopped. Do not over fry them. Finish frying all and enjoy with a cup of coffee or tea.deep frying hurigadale ambode or fried gram masala vada
