Masala kaju is prepared using cashews, spices, salt and chilli powder.

I have given a set of spice powders in this masala cashew recipe, however you can skip or adjust the spices as per your taste. You can use just the chilli powder and salt. Or you can use black pepper powder, amchur powder and salt. Like this you can go creative each time.

Masala cashew recipe

Preparation time: 1 min
Cooking time: 10 min
Serves: 1 cup

Ingredients: (measuring cup used = 240ml)

  1. 1 cup cashews
  2. 1/2 tsp red chilli powder (adjust as per your taste)
  3. 1/4 tsp black pepper powder
  4. 1/4 tsp cumin powder
  5. 1/4 tsp garam masala
  6. Big pinch amchur powder
  7. Big pinch asafoetida
  8. 2 tsp ghee
  9. Salt as per your taste

Instructions for making masala cashew or godambi:

  1. Take all the spices like black pepper powder, cumin powder, garam masala, amchur powder, asafoetida and salt in a container.spices for masala cashew or roasted kaju recipe
  2. Give it a quick mix and keep it aside.spices for masala cashew or roasted kaju recipe
  3. Heat the ghee in a frying pan and add the cashews.spices for masala cashew or roasted kaju recipe
  4. Roast the cashews under low flame until slightly golden brown and crisp.spices for masala cashew or roasted kaju recipe
  5. Then add the red chilli powder. Give a quick mix. Roasting red chilli powder enhances the taste.coriander leaves and salt for masala cashew or roasted kaju recipe
  6. Immediately add the remaining spices (Mixed and kept in the beginning).masala and puffed rice for masala cashew or roasted kaju recipe
