The first soutekai kosambari or cucumber salad is using cucumber, roasted peanuts (shenga) and coocnut. The second southekayi kosambari is using cucumber, carrot, onion, tomato and spices.

These 2 kosambari or salad recipes are very tasty and are very unique in taste. The first one is mild and filling. The roasted peanuts give a nutty crunchy taste. In this I have added the green chillies while preparing the tempering as rosting green chillies makes it less acidic. Hence the first type is very soothing to the tummy. But the second one is tangy and spicy, which is a perfect choice to increase the appetite and light on tummy. Go for the second type if you are looking for a spicy salad.

Hesarukalu kosambari recipe

Preparation time: 25 hrs
Cooking time: 5 min
Serves: 3

Ingredients (type1): (measuring cup used = 240ml)

  1. 1 cup chopped southekai or cucumber
  2. 1/2 cup roasted peanuts or shenga
  3. 2 tbsp grated coconut
  4. 1/2 tsp mustard
  5. 1/2 tsp cumin seeds
  6. 1/2 - 1 green chilli chopped
  7. Few curry leaves chopped
  8. Big pinch of asasoetida
  9. 1/2 tsp lemon juice
  10. 1 tsp oil
  11. Salt as per your taste

Ingredients (type2): (measuring cup used = 240ml)

  1. 1 cup chopped southekai or cucumber
  2. 1/4 cup finely chopped carrot
  3. 1/2 cup chopped onion
  4. 1/2 cup chopped tomato
  5. 1 tbsp finely chopped coriander leaves
  6. 1/2 green chilli chopped
  7. 1/4 - 1/2 tsp red chilli powder (adjust as per your taste)
  8. 1/2 tsp chat masala
  9. 1/4 tsp cumin powder
  10. 1/4 tsp black pepper powder
  11. 1/2 tsp lemon juice
  12. Salt as per your taste

Instructions for making southekai kosambari (type1):

  1. Take chopped cucumber in a bowl.chopped cucumber for southekai kosambari or cucumber salad
  2. Add in roasted peanuts or shenga.roasted peanuts for southekai kosambari or cucumber salad
  3. Add in coconut.coconut for southekai kosambari or cucumber salad
  4. Add in salt as per taste.salt for southekai kosambari or cucumber salad
  5. Prepare tempering using oil. mustard, cumin, green chilli, curry leaves and asafoetida.tempering for southekai kosambari or cucumber salad
  6. Add the tempering to the salad. Give it a quick mix.making southekai kosambari or cucumber salad
