Karnataka style sambar powder recipe explained with step by step pictures and a video. I have explained 2 types of Karnataka style sambar powder recipes here. One is Udupi or Mangalore or Malnad style sambar powder recipe and the second one is Bangalore-Mysore style sambar powder recipe. Udupi sambar powder or huli pudi prepared using gram dal, urad dal, coriander seeds, cumin seeds, red chilies, fenugreek seeds and asafoetida. Mysore sambar powder or huli pudi prepared using toor dal, urad dal, coriander seeds, cumin seeds, red chili, fenugreek seeds and asafoetida.

Sambar powder recipe remains same throughout Karavali and malnad region of Karnataka. Whereas in Bangalore-Mysore region sambar powder recipe varies slightly from family to family. All spices are roasted and powdered to get fresh and aromatic Karnataka style or Udupi style or Mysore style sambar powder. Click this link to read sambar recipe prepared using this sambar powder.

In these sambar powder recipes I have not used curry leaves and mustard seeds, which is optional and is generally used while tempering the sambar. And I have not used turmeric, which is used while cooking the vegetables. Also I have not used pepper as in my family we do not like spicy sambar, which is another optional ingredient for Mysore style sambar powder .

Sambar powder recipe

Preparation time: 2 min
Cooking time: 15 min
Serves: 1 cup

Ingredients for Udupi style sambar powder: (measuring cup used = 240ml)

  1. 15 - 20 red chilies (I used medium spiced kashmiri chilies)
  2. 6 tsp urad dal
  3. 3 tsp gram dal or chana dal
  4. 10 - 12 tsp coriander seeds
  5. 2 tsp cumin seeds
  6. 1 tsp fenugreek seeds
  7. 1/2 tsp asafoetida
  8. 2 tsp cooking oil

Ingredients for Mysore style sambar powder: (measuring cup used = 240ml)

  1. 15 - 20 red chilies (Mix both byadgi and guntur chilies)
  2. 6 tsp urad dal
  3. 3 tsp toor dal
  4. 3 tsp masoor dal or gram dal (optional)
  5. 10 - 12 tsp coriander seeds
  6. 2 tsp cumin seeds
  7. 1 tsp fenugreek seeds
  8. 1 tsp pepper (optional, use if you like spicy sambar)
  9. 1 tsp mustard seeds (optional, I didn't use)
  10. 1/2 tsp asafoetida
  11. 2 tsp cooking oil

Instructions for making sambar powder:

  1. If you want to prepare Udupi style sambar powder then take all the ingredients like red chilies, urad dal, gram dal, coriander seeds, cumin seeds, fenugreek seeds and asafoetida as per the measurement given in the Udupi style ingredients list.ingrediets for udupi style sambar powder recipe
  2. If you want to prepare Mysore style sambar powder then take all the ingredients like red chilies, urad dal, toor dal, coriander seeds, cumin seeds, fenugreek seeds, mustard seeds and asafoetida as per the measurement given in the Mysore style ingredients list.ingrediets for mysore style sambar powder recipe
  3. Take a frying pan, add 2 tsp of oil and heat it. Now to begin with fry red chilies. Roast the red chilies under medium flame until crisp and swollen. Once the chilies are fried, add in dals and fry until slightly brown. Next add in all other ingredients and fry until you get nice aroma and switch off the stove.frying spices for sambar powder recipe
  4. Wait until the fried spices are cool. Transfer them into a dry mixie jar.fried spices in mixer grinder for sambar powder recipe
