Iyengar style puliyogare or puliyodharai or tamarind rice recipe explained with step by step pictures. Learn how to prepare tasty and authentic Iyengar puliyogare recipe prepared using Iyengar puliyogare gojju. Preparing Iyengar puliyogare is very easy if puliyogare gojju is ready.

Iyengar style puliyogare is prepared in 3 stages. Stage 1 is preparing puliyogare powder, stage 2 is preparing puliyogare gojju and stage 3 is preparing the puliyogare or tamarind rice using puliyogare gojju. Iyengar style puliyogare recipe

Preparation time: 10 min
Cooking time: 20 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I used sona masuri)

Ingredients for tempering:

  1. 2 tbsp ground nut
  2. 1/2 tsp mustard seeds
  3. 1 tsp sesame seeds or ellu
  4. 1 tsp urad dal (optional)
  5. 1 tsp bengal gram dal or chana dal
  6. 8 - 10 cashews
  7. 5 - 6 curry leaves
  8. 1/4 tsp turmeric powder
  9. 1/4 tsp asafoetida or hing
  10. 2 tbsp dessicated coconut
  11. 2 tbsp cooking oil

Instructions for making puliyogare:

  1. Cook the rice and keep it aside. Please note the rice should not be over cooked for puliyogare.
  2. Now in another pan heat oil and roast peanuts until it starts crackling.groundnuts or peanuts for Iyengar style puliyogare or tamarind rice
  3. Next add in broken red chili, mustard seeds, cashew, gram dal, urad dal, sesame seeds.tempering for Iyengar style puliyogare or tamarind rice
  4. When the mustard seed splutters add in curry leaves and dessicated coconut.curry leaves and coconut for Iyengar style puliyogare or tamarind rice
  5. Add the above tempering into the cooked rice and mix well.cooked rice for Iyengar style puliyogare or tamarind rice
  6. Also add in 2 tbsp of puliyogare gojju or paste. (adjust the quantity as per your taste).puliyogare gojju for Iyengar style puliyogare or tamarind rice
