Thondekai or tindora fry is prepared using ivy gourd, coconut, red chili and mustard seeds. Thondekai palya or tendli sabzi goes very well with rice or chapathi. This type of palya or stir fry is prepared across Malnad and Karavali region of Karnataka.

Ivy gourd is familiar by different names like thondekayi or thondekai (kannada), Ivy gourd or gherkins (English), tindora (Hindi), dondakaya (Telugu), kovakka (Malayalam), kovakkai (Tamil), tendli or tondli (Marathi), manoli (tulu), kundru (Oria) and kundli (assamese). Thondekai palya or ivy gourd stir fry

Preparation time: 10 min
Cooking time: 20 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1/4 kg thondekai or ivy gourd
  2. 1 tsp urad dal
  3. 1 tsp gram dal or chana dal
  4. 4 - 6 tsp cooking oil
  5. 1/2 tsp mustard seeds
  6. A big pinch of turmeric powder
  7. A big pinch of asafoetida
  8. 4-5 curry leaves
  9. 1 gooseberry sized jaggery (optional)
  10. Salt as per your taste
  11. 1 tbsp finely chopped coriander leaves

Ingredients for grinding:

  1. 1/2 tsp mustard seeds
  2. 2 - 3 red chili
  3. 1/2 cup grated coconut

Instructions for making thondekai palya or ivy gourd stir fry:

  1. Wash and chop the thondekai and ivy gourd. You can also precook the thondekai to save time.
  2. Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds, 1 tsp urad dal and 1 tsp chana dal.tempering for thondekai palya or ivy gourd stir fry
  3. When the mustard seeds splutters and urad dal turns brown, add in asafoetida, turmeric powder, broken red chili and curry leaves.tempering for thondekai palya or ivy gourd stir fry
  4. Next add in chopped thondekai. Give a quick mix.Chopped ivy gourd for thondekai palya or ivy gourd stir fry
  5. Add in fresh green peas (optional).fresh green peas for thondekai palya or ivy gourd stir fry
  6. Add 1/2 cup of water, bring it to boil, close the lid and cook until soft.cooking thondekai palya or ivy gourd stir fry
  7. When it is almost cooked, add in jaggery and salt.salt and jaggery thondekai palya or ivy gourd stir fry
  8. Meanwhile dry grind grated coconut, red chili and 1/2 tsp of mustard seeds using a small mixie jar.grind coconut and red chili for thondekai palya or ivy gourd stir fry
  9. Add in ground masala. Give a quick stir.ground masala for thondekai palya or ivy gourd stir fry
  10. Add in coriander leaves and mix well for a minute. Switch off the stove. Serve it with hot steaming rice or chapathi.thondekai palya or ivy gourd stir fry
