It is a very helpful for diabetic people. It is high in vitamin C and a good source of fiber. Moreover it s very tasty. Corn pulao or corn rice recipe

Preparation time: 20 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup rice (I use sona masuri)
  2. 1 finger length cinnamon
  3. 8-10 cloves
  4. 1 cardamom
  5. 2 big onions
  6. 2 tomatoes (or 1/2 lemon)
  7. 1 Star Anise
  8. 1 Indian bay leaf
  9. 1/4 tsp turmeric powder (optional)
  10. 3 tbsp cooking oil / Ghee
  11. 2 cups water (depends on rice quality)
  12. Salt as per your taste

Ingredients for grinding: (measuring cup used = 240ml)

  1. 1/2 cup grated coconut
  2. 2cm length ginger
  3. 5-6 cloves garlic
  4. 1 tsp coriander seeds
  5. 1/2 tsp cumin seeds
  6. 1-2 green chili
  7. 1 handfull coriander leaves
  8. 1/2 cup water for grinding

Instructions for making corn pulao:

  1. Rinse the rice and keep it ready. Also chop the tomatoes and onions and keep it ready.
  2. Take all the ingredients listed under "for grinding".masala ingredients for corn pulao or corn rice
  3. Make a coarse paste using 1/2 cup of water. Keep it aside.grinding masala for corn pulao or corn rice
  4. Take oil or ghee in a pressure cooker and heat it. Add in all dry spices like cinnamon, cloves, bay leaf, star Anise and cardamom.tempering for corn pulao or corn rice
  5. Add in chopped onions and fry until soft.onion for corn pulao or corn rice
  6. Add in chopped tomatoes and fry until soft. If you want to add lemon juice at the end instead of tomatoes.tomato for corn pulao or corn rice
  7. Add in ground masala and tumeric powder. Saute until raw smell is gone.masala for corn pulao or corn rice
  8. Add in sweet corn and give a quick mix.sweet ocrn for corn pulao or corn rice
  9. Add in rinsed rice. Mix it well.rice for corn pulao or corn rice
  10. Add in 2 cups of water (little more or less depending on rice quality). water for corn pulao or corn rice
  11. Add in salt and mix well.
  12. Wait until it comes to rolling boil.
  13. Close the lid and make 2 whistles.
  14. Once the pressure subsides, open the lid and mix carefully. Add in lemon juice at this stage if you want to replace tomatoes with lemon juice. Serve hot with mosaru bajji or salad. how to make corn pulao or corn rice
