Veg kurma or mixed vegetable kurma recipe explained with step by step pictures and a video. This is a hotel style mixed vegetable kurma or curry. This vegetable kurma is very tasty and easy to prepare. This kurma is served as an accompaniment with chapathi, dosa or poori. Vegetable kurma is very similar to Karnataka style veg sagu with a slight variation. Like sagu, vegetable kurma also will have very soft and mild taste.

This recipe is from a popular restaurant or hotel. I am very happy to post this recipe as many readers have requested for this. This is a mixed vegetable kurma and you can use any vegetable of your choice. I have used most common vegetables like carrot, beans, potato and green peas. Even the spices you can modify according to your taste.

Veg kurma recipe

Preparation time: 20 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 small carrot
  2. 1 medium sized potato
  3. 8-10 beans
  4. 1 small kohlrabi or navilkosu or knol khol
  5. Few cauliflower florets (optional)
  6. 1/4 cup soaked or fresh green peas
  7. 1/4 tsp turmeric powder
  8. 1/2 - 1 tsp red chili powder
  9. 2 tsp coriander powder
  10. 1/2 tsp cumin powder
  11. Salt as per your taste

Ingredients for tempering: (measuring cup used = 240ml)

  1. 4 tsp cooking oil
  2. 1/2 tsp mustard seeds
  3. 1/2 tsp cumin seeds
  4. 1 bay leaf
  5. 4 - 5 curry leaves
  6. 1 big onion
  7. 1 tomato

Ingredients for grinding:

  1. 1/4 cup grated coconut
  2. 2 tsp roasted gram or hurigadale
  3. 1cm length ginger
  4. 3 cloves garlic
  5. 1 tsp fennel seeds
  6. 1 tsp poppy seeds or gasagase
  7. 4 - 5 cashews
  8. 1/2 finger length cinnamon
  9. 3-4 cloves
  10. 1 cardamom
  11. 2 tbsp coriander leaves
  12. 2 tbsp mint or pudina leaves

Instructions for making vegetable kurma or veg kurma:

  1. Chop all the vegetables. You can take any vegetable of your choice.vegetables for veg kurma or mixed vegetable curry
  2. Transfer all chopped vegetables into a pressure cooker. Add in salt and a pinch of turmeric and cook by making 2 whistles. Please note you should not add onion and tomato.cooking vegetables for veg kurma or mixed vegetable curry
  3. Take all the ingredients listed under "for grinding" as per the measurement.spices for veg kurma or mixed vegetable curry
  4. Transfer all the above ingredients into a mixe jar or blender. And make a fine paste using required water. Set it aside.ground masala for veg kurma or mixed vegetable curry
  5. Take 4 tsp of oil in a wok or frying pan and heat it. Now prepare tempering using mustard seeds, cumin seeds, bay leaf and curry leaves.tempering for veg kurma or mixed vegetable curry
  6. Add in chopped onions and fry until soft. onion for veg kurma or mixed vegetable curry
  7. Add in chopped tomatoes and fry until soft. tomato for veg kurma or mixed vegetable curry
  8. Add in ground spices or masala from step 4 and give a quick stir.ground masala for veg kurma or mixed vegetable curry
  9. Add in dry masala powders like red chili powder, coriander powder, cumin powder and turmeric powder. Give a quick mix.spice powders for veg kurma or mixed vegetable curry
  10. Next add in cooked vegetables from step 2.cooked vegetables for veg kurma or mixed vegetable curry
  11. Add in required water, salt and mix well. Bring it to boil and continue boiling for 5 minutes. Serve it with dosa or poori or chapathi.water and salt for veg kurma or mixed vegetable curry
