Gorikai palya or cluster beans stir fry

Preparation time: 10 min
Cooking time: 20 min
Serves: 2

Ingredients: (measuring cup used = 240ml)

  1. 1/4 kg gorikai or cluster beans
  2. 1 tsp urad dal
  3. 1 tsp gram dal or chana dal
  4. 4 - 6 tsp cooking oil
  5. 1/2 tsp mustard seeds
  6. 1 red chili (optional)
  7. A big pinch of turmeric powder
  8. A big pinch of asafoetida
  9. 4-5 curry leaves
  10. 1 small gooseberry sized jaggery
  11. 1 small marble sized tamarind
  12. Salt as per your taste
  13. 2 tbsp finely chopped coriander leaves

Ingredients for grinding:

  1. 1/2 tsp mustard seeds
  2. 2 - 4 red chili
  3. 1/2 cup grated coconut

Instructions for making gorikai palya or cluster beans stir fry:

  1. Wash and chop the cluster beans by discarding the ends.
  2. Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds, 1 tsp urad dal and 1 tsp chana dal.tempering for gorikai palya or cluster beans stir fry
  3. When the mustard seeds splutters and urad dal turns brown, add in broken red chili, turmeric powder, asafoetida and curry leaves.tempering for gorikai palya or cluster beans stir fry
  4. Add in chopped cluster beans and give a quick mix. You can precook the cluster beans too.Chopped cabbage for gorikai palya or cluster beans stir fry
  5. Add in salt, tamarind extract and jaggery. Give a quick mix.salt and jaggery for gorikai palya or cluster beans stir fry
  6. Add 1/2 cup of water and close the lid. Stir in between and cook until soft under low flame.cooking gorikai palya or cluster beans stir fry
  7. Meantime dry grind the grated coconut, red chilies and 1/2 tsp of mustard seeds using a small mixie jar. I have crushed mustard seeds before grinding.grind coconut and red chili for gorikai palya or cluster beans stir fry
  8. Add in ground coconut, red chili and mustard masala.ground masala for gorikai palya or cluster beans stir fry
  9. Mix well for a minute. Switch off the stove and serve it with hot steaming rice or chapathi.gorikai palya or cluster beans stir fry
