Bendekai palya or bhindi sabzi is prepared using ladies finger, onion, garlic, green chili, red chili and curd. Bendekai palya or bhindi sabzi goes very well with rice or chapathi. This is a very healthy stir fry recipe.

This recipe is similar to Andhra style Lady's finger fry. I have used garlic in this recipe, which you can replace it with asafoetida. I have also used curd in this recipe and that can be replaced by lemon juice.

Bendekai palya or bhindi stir fry

Preparation time: 10 min
Cooking time: 20 min
Serves: 2

Ingredients: (measuring cup used = 240ml)

  1. 1/4 kg bendekai or lady's finger
  2. 2 - 3 tbsp cooking oil
  3. 1/2 tsp mustard seeds
  4. 1/2 tsp cumin seeds
  5. 1 red chili
  6. 1 - 2 green chili
  7. 4-5 curry leaves
  8. 2 - 3 cloves of garlic
  9. 1 medium sized onion
  10. A big pinch of turmeric powder
  11. 2 tbsp curd or 1 tbsp lemon juice
  12. Salt as per your taste

Instructions for making bendekai palya or bhindi stir fry:

  1. Wash, pat dry and chop the ladies finger by discarding the ends. Also chop garlic and onion. chopped ladies finger and onion for bendekai palya or ladies finger stir fry
  2. Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds and 1/2 tsp cumin seeds.tempering for bendekai palya or ladies finger stir fry
  3. When the mustard seeds splutters and in broken red chili.tempering for bendekai palya or ladies finger stir fry
  4. Immediately add in slit green chili, chopped garlic and curry leaves.green chili and garlic for bendekai palya or ladies finger stir fry
  5. Followed by add in chopped onion.Chopped onion for bendekai palya or ladies finger stir fry
  6. Fry until onion turns translucent.frying onion for bendekai palya or ladies finger stir fry
  7. Add in chopped ladies finger. Stir for 2 minutes under high flame.chopped okra for bendekai palya or ladies finger stir fry
  8. Reduce the flame. Add in turmeric powder and curd.salt and jaggery for bendekai palya or ladies finger stir fry
  9. Give a quick mix and close the lid. Cook the ladies finger under low flame.cooking bendekai palya or ladies finger stir fry
  10. Stir in between and cook until soft under low flame.cooking bendekai palya or ladies finger stir fry
  11. At the end sprinkle the salt and give a quick mix. Serve it with hot rice or chapathi.salt for bendekai palya or ladies finger stir fry
