Southe pundi or unde kadubu recipe explained with step by step pictures. This is a typical Malnad and Udupi-Mangalore style breakfast recipe and popular by different names like unde, unde kadubu, undlige, pundi and pundi gatti. This version of unde or pundi is prepared using rice, cucumber and coconut. Southe pundi or unde kadubu is an easy, healthy and tasty breakfast recipe. You can serve it with either chutney or sambar or easy tomato saaru or rasam.

Southe pundi or unde kadubu recipe

Preparation time: 8 hours + 10 min
Cooking time: 30 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1.5 cup good quality dosa rice
  2. 1/2 cucumber
  3. 2.5 cup water
  4. 1/2 cup grated coconut
  5. Salt as per your taste

Instructions for making southe pundi or unde kadubu:

  1. Rinse the rice, drain the water and wait until completely dry. I generally leave it overnight.rinsed rice for southe pundi or unde kadubu
  2. Once it is dry, coarse grind it using a mixer grinder. Just run the mixie for few seconds. The consistency should be like rice rava or idli rava. Keep it aside.home made rice rava for southe pundi or unde kadubu
  3. Grate the cucumber and coconut and keep it ready.grated cucumber and coconut for southe pundi or unde kadubu
  4. Next boil the water in a wide pan along with salt.boil water for southe pundi or unde kadubu
  5. When the water starts boiling add in grated coconut and cucumber. Next add in rice rava gradually by stirring continuously using a flat spatula. Stirring continuously is very important to avoid lumps. Keep stirring continuously for few minutes under medium flame.rice rava for southe pundi or unde kadubu
  6. In no time it will become thick. If the spatula can stand straight (without falling) in the dough, it is done. Switch off the stove. The dough will be very soft at this stage.dough for southe pundi or unde kadubu
  7. Wait until warm. Wet your fingers with water, take a small portion of dough and make small orange sized ball. Then make a dent using your thumb. Steam cook it for 15 minutes under medium flame. The time may vary depending on the quantity. Also you can make it in any shape like flat, oval or round.steaming southe pundi or unde kadubu
  8. Once cooked, take out the pundi or unde kadubu and serve it with chutney or saaru.southe pundi or unde kadubu
