Hesarukalu kosambari or moong sprouts salad recipe explained using step by step pictures and a video. Hesarukalu kosambari or sprouted mung bean salad is a very easy and healthy salad recipe. Molake hesaru kaalu kosambari or green gram sprots salad is good for weight loss and is prepared using sprouts, carrot, cucumber, coconut, pomegranate, coriander leaves and green chilli.

I have used pomegranate seeds in this kosambari recipe, which is optional and can be replaced with apple pieces or any other dry fruit pieces. You can even skip it. Also I have added the green chillies while preparing the tempering as rosting green chillies makes it less acidic.

Hesarukalu kosambari recipe

Preparation time: 25 hrs
Cooking time: 5 min
Serves: 3

Ingredients: (measuring cup used = 240ml)

  1. 1 cup moong sprouts or molake hesarukalu
  2. 1/2 cup grated carrot
  3. 1/2 cup finely chopped cucumber
  4. 2 tbsp pomegranate seeds
  5. 1/2 cup grated coconut
  6. 1 tbsp finely chopped coriander leaves
  7. 1/2 tsp lemon juice (or 1 small tomato)
  8. Salt as per your taste

Ingredients for tempering:

  1. 1 green chilli finely chopped
  2. 1/2 tsp mustard seeds
  3. Big pinch of asafoetida
  4. 2 tsp cooking oil

Instructions for making hesarukalu kosambari:

  1. Take moong sprouts or green gram sprouts in a bowl.mung bean sprouts for hesarukalu kosambari or moong sprouts salad
  2. Add in grated carrot.grated carrot for hesarukalu kosambari or moong sprouts salad
  3. Add in finely chopped cucumber. I have peeled the cucumber.cucumber for hesarukalu kosambari or moong sprouts salad
  4. Add in grated coconut.grated coconut for hesarukalu kosambari or moong sprouts salad
  5. Add in pomegranate seeds. Please note, these are optional. You can replace it with any other fruits or dry fruits.pomegranate seeds for hesarukalu kosambari or moong sprouts salad
  6. Add in finely chopped coriander leaves.coriander leaves for hesarukalu kosambari or moong sprouts salad
  7. Add in salt as per your taste.salt for hesarukalu kosambari or moong sprouts salad

  9. Prepare tempering with oil, mustard seeds, green chilli and asafoetida.tempering for hesarukalu kosambari or moong sprouts salad

  11. Add in lemon juice as per your taste. You can replace it with finely chopped tomato as well. Give a good mix and serve.lemon juice for hesarukalu kosambari or moong sprouts salad
