Hagalakayi or hagalakai chutney

Hagalakayi chutney or bitter gourd chutney recipe explained with step by step pictures and a video. This hagalakayi chutney is prepared using bitter gourd, coconut, red chili and urad dal. Bitter gourd chutney is a very tasty chutney goes very well with rice.

As we all know, most of the hagalakayi or bitter gourd recipes are with jaggery like I have posted one bitter gourd sweet curry or gojju recipe. But this bitter gourd chutney is an exception. There is no jaggery or sweet in this chutney. But do not think at all...This chutney tastes too good. I do not know how to explain but I can only say please do try once.

Hagalakayi chutney

Preparation time: 10 min
Cooking time: 5 min
Serves: 4

Ingredients: (measuring cup used = 240ml)

  1. 1 medium sized hagalakayi or bitter gourd or karela
  2. 1 cup grated coconut
  3. 2 - 4 red chilli
  4. 4 tsp urad dal
  5. 1/4 tsp mustard seeds
  6. A marble sized tamarind
  7. 2 tsp cooking oil
  8. Salt as per your taste

Ingredients for tempering:

  1. 2 tsp cooking oil
  2. 1 red chilli
  3. 1/4 tsp mustard seeds

Instructions for making Hagalakayi chutney:

  1. Take a non-juicy bitter gourd. Generally I buy thin white ones. If it is a thick and juicy bitter gourd, then frying process will take more time.hagalakayi for bitter gourd chutney
  2. Cut the bitter gourd lengthwise and deseed.cutting hagalakayi for bitter gourd chutney
  3. Now chop the bitter gourd into thin slices. Then immerse the bitter gourd slices in salt water for about 10 minutes(required water plus 1 tsp salt).hagalakayi in salt water for bitter gourd chutney
  4. Heat a frying pan. Add in 1/2 tsp oil, red chilli and mustard seeds. Fry until urad dal turns golden brown. Set it aside.spices for bitter gourd chutney
  5. In the same frying pan, add 2 tsp oil and chopped bitter gourd slices by squeezing out the water.frying hagalakayi for bitter gourd chutney
  6. Keep frying under medium flame until all the water content dried.frying hagalakayi for bitter gourd chutney
  7. Now reduce the flame and keep frying bitter gourd slices until golden brown and crisp by stirring occasionally.frying hagalakayi for bitter gourd chutney
  8. Grind coconut, salt, tamarind, fried urad dal, mustard seeds and red chili using a mixer grinder. Grind until fine paste using required water.grinding coconut and spices for bitter gourd chutney
  9. Now add in fried bitter gourd slices and coarse grind it.grinding bitter gourd for bitter gourd chutney
  10. Temper it with oil, red chilli and mustard seeds. Serve it with hot steaming rice.tempering bitter gourd chutney
